*****~ DISCLAIMER~***** I AM NOT A NUTRITIONIST! I am just sharing information that I have learned through reading different books. So make sure you talk to your doctor to make sure you can eat this type of food.
• 1 tsp vegetable oil (OPTIONAL, I always saute without oil :) )
• 1 onion, diced
• 1 carrot sliced
• 1 clove of garlic, minced
• 4 cups vegetable broth for soup consistency; 3 cups for a thicker consistency
• 1 cup dry lentils
• 1/4 tsp pepper
• 1/4 tsp dried thyme
• 2 bay leaves
• dash salt
In a large pot, saute the onions, garlic and carrot in the vegetable oil for 3-5 minutes until onions turn clear.
Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.
Reduce heat to a simmer. Cover and cook until lentils are soft, about 30-45 minutes.
Makes 4 servings of lentil soup.
